Their oysters, whether flat or cupped, small, medium, or large, come from renowned regions like Brittany, Great Britain, Normandy, and Zeeland, proudly showcasing their origins: Belon No. 5 from Cadoret, Normande Utah Beach from Monsieur Jean-Paul, Fine de Claire Barrau, and Spéciale Gillardeau.

Under the meticulous eye of Paulo Campos, who is always in his signature white and blue-striped sailor shirt, everything here is irresistibly tempting. Who's behind ?
Charlotte Résimont & Jean-Michel Hamon
What could be more fitting for a true Breton than to lead one of the most iconic maritime spots in the city? This Breton is Jean-Michel Hamon, renowned for his famous Toucan Brasserie, which has been a staple since 1999, right on the same street as Toucan sur Mer. Born and raised in Brittany, he trained at the hotel school in Quimper and began his professional journey in Switzerland. Life’s twists and turns eventually brought him to our country, where he fell in love with the place. Since 2018, his daughter Charlotte has taken the helm of these two impressive establishments.
